  • 2-3 tablespoons cooking oil
  • 2-3 cloves garlic, minced
  • 1-2 shallots, finely sliced
  • 1-2 red chilies, sliced (optional, for spice)
  • 1-2 eggs
  • 1 cup protein (chicken, shrimp, tofu, etc.), diced
  • 1 teaspoon shrimp paste (terasi), optional
  • 1 teaspoon tamarind paste or juice, optional
  • 2 teaspoons sweet soy sauce (kecap manis)
  • 1 teaspoon regular soy sauce
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • Garnish: Cucumber slices, tomato wedges, fried shallots, and chopped scallions

Instructions:

  1. Prepare Ingredients:

    • Cook rice in advance and let it cool down. Cold rice works best for fried rice.
    • Chop garlic, shallots, chilies, protein, and any other desired ingredients.
  2. Heat Oil:

    • Heat cooking oil in a wok or a large skillet over medium heat.
  3. Saute Aromatics:

    • Add minced garlic and sliced shallots to the hot oil. Stir-fry until fragrant and slightly golden.
